OMG this is one of my fav dinners utilizing the grill! This dish is especially great if you are looking for a plant based hearty meal for non vegans to enjoy- they won't miss the meat here! You can't beat an abundance of grilled veggies tossed with vegan pesto, fresh lemon juice, briny capers & fresh diced tomato! Oh & the small portion of red wine is a good source of the longevity antioxidant resveratrol- yay!
Grill any combo of your fav veggies!
Red & orange bell pepper
Toss grilled veggies with hot pasta & vegan pesto, then add lemon juice, capers, & diced fresh tomato. Top with red pepper flakes & fresh cracked black pepper! Click HERE to get my fav vegan pesto, omg it is the BEST!
