The Benefits of Avocado in Salad!

Experiments have measured that adding avocados to salads increases the absorption of certain antioxidants like α-carotene, β-carotene, lutein and lycopene!

Avocados are a good source of monounsaturated fat, which can reduce your risk of heart disease. Using avocado oil in your salad dressing works as well too! Avocados have: Folate, Magnesium, Potassium, Riboflavin (Vitamin B2), Niacin (Vitamin B3), Pantothenic Acid (Vitamin B5), Pyridoxine (Vitamin B6), & even Vitamin C.

Kept this salad simple with:

  • Base of spinach, romaine, & arugula

  • Top with sliced carrots, cherry tomatoes, & sweet mini peppers

  • Dice up a real big avocado

  • Top with fresh black pepper & goddess dressing
