Black Bean & Corn Pico!

My favorite short cut to making the best black bean and corn salsa is that I use Whole Foods pre made Pico de Gallo! Then I add in fresh cilantro, more lime juice & a diced jalapeño depending on the crowd! You also just can dice your own tomatoes & onion & mix in the rest!


  • 1/2-1 c of organic sweet corn (frozen & thawed)

  • 1 can of no salt added organic black beans

  • 1 cup pico de Gallo (or just diced tomato w a little minced white onion)

  • 2 avocados, large cubes

  • Jalepeño sliced, optional

  • Fistful of cilantro torn up

  • Squeeze of lime juice

  • Salt + pepper to taste

Serve with sliced cucumbers, strips of red peppers, blue corn chips or organic Late July Brand Scoops ! I love my Pyrex glass mixing bowls with lids..find these cool scalloped ones HERE !!

I made this camping with friends in the mountains, everyone approved!
